Strawberry Spring Cake with Cream Cheese Icing
Gather:
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- ½ cup sour cream
- 1 tsp vanilla extract
- 1 cup fresh strawberries
Cream Cheese Icing
- 8 oz cream cheese, softened
- ¼ cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Design
1. Preheat oven to 350°F. Grease and flour an 8-inch round cake pan.
2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
3. In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time.
4. Mix in sour cream and vanilla. Gradually add dry ingredients.
5. Pour batter into pan and bake for 30–35 minutes, or until a toothpick comes out clean. Cool completely.
6. For icing, beat cream cheese and butter until smooth. Add powdered sugar and vanilla. Spread over cooled cake. Top with fresh berries.
